Sunday Breakfast: Baked Beans with Pancetta and Cherry Tomatoes

A hugely belated happy 2013!

Evidently many of my new year’s resolutions have already fallen by the wayside, one of which was to keep posting about my kitchen, dining and travel adventures. Others included the standard eat better, exercise more, lose 5kg et al, and it’s safe to admit that I haven’t been diligent in that department either!

It’s the thought that counts, I’m sure?

In the interest of easing back into things, I thought I’d share a quick and easy recipe that’s perfect to whip up on a lazy Sunday morning, using ingredients that you’ll probably have at home.

Sunday morning bake up

Baked beans with pancetta and cherry tomatoes

All you need is:

1 x Tin Cannellini Beans

350g cherry tomatoes

100g pancetta, torn

1/3 cup chicken stock

3 cloves garlic, peeled

Squeeze lemon juice

Basil leaves

Salt, pepper and crusty bread to serve

It’s as easy as:

1. Preheat oven to 220 degrees celcius and pop all of the ingredients – cannellini beans through basil – into a baking dish

2. Place the baking dish in the oven for half an hour

3. Enjoy with crusty bread and a pinch of salt and pepper to taste.
